I'm busy making cakes, perfecting my technique. I've made scones so many times in the past: plain scones, cheese scones, herb scones for cobbler topping... and always have made them a little 'rough and ready'. I've never used a rolling pin, because I think that squishes out some of the lightness.
This time, with the focus being on making the perfect scone, I was faced with the dilemma of hands or rolling pin... I opted for hands, and when I took them out the oven, wished they were a bit flatter.
I took a few to work (with some jam and cream, because it would be rude not to) and shared them with a couple of friends. The verdict was that scones should look hand made, not perfectly round/flat, and that these were perfect. I must admit, they looked pretty good loaded up with cream and jam (note, I said cream and jam, because that's the right way to do things!)
Hands it is.
