Fantastic Flapjacks: a fun and fuss free recipe to make with little people
250g porridge oats
125g butter or baking margerine
2-3 tbsp golden syrup/honey/maple syrup
Melt the butter, then stir in the porridge oats and sugar.
Add the syrup or honey if your choice, mix thoroughly.
If you like, you can add a handful of dried fruit, chocolate chips, orange zest etc
Line a tin, scoop or pour in the mixture, and pay it down with the back of a spoon.
Bake on 180c for about 20 minutes, or until it starts to turn golden brown. Don’t worry if it still feels soft when you take it out of the oven, it will harden as it cools.
Tip: We make double the mixture, because these freeze really well (wrap carefully before freezing) and are perfect to take out one piece at a time for packed lunches.
Rob and Debra hosted a wonderful celebration after their wedding, at Eridge Village Hall, just outside of Tunbridge Wells, Kent.
We welcomed their guests with chilled glasses of Prosecco, and fresh canapés: cucumber bites with smoked salmon, cream cheese and fresh dill, caprese skewers, and crostini with goats cheese and balsamic glazed beetroot.
The hall was beautifully decorated, with simple details, and the vintage crockery looked perfect in place. Eridge Village Hall is such a lovely venue - we really hope to be there again for another booking :-)
A full afternoon tea was served:
- Homemade Lincolnshire sausage rolls, sandwiches with roast beef and horseradish, ham and English mustard, mozzarella with freshly made pesto
- plain and fruit scones, with clotted cream and strawberry jam
- Lemon drizzle cupcakes, chocolate brownies, individual frangipani, and bite sized carrot cakes
All washed down with fair trade tea and coffee, and elderflower cordial.
This cocktail was soooooooo good, looking at the picture makes me want to go and whip one up right now!
Here is a really easy, and reliable recipe to make 'no spread' biscuits (which means whatever shape cutter you use, or pattern you want to make in them, it won't distort when you cook them) - perfect for something like these.

The cutter set comes with enough duplicate letters to come up with all sorts of words or phrases for your loved one. My husband opened his lunch at work to find a cookie with 'nice bum' written on it ;-)

200g unsalted butter or solid baking margarine (room temperature)
200g caster sugar
400g plain flour
1 egg (lightly beaten)
1 tea spoon vanilla essence
